The story of Höşmerim dates back to the Ottoman period. According to legend, when a soldier returned from war, his wife asked him, “Is it nice, my man?” and this is where the name of this dessert comes from. Over time, many versions have emerged in different regions, such as with walnuts, pistachios, clotted cream and even molasses. The version in Konya cuisine is known for being plain and buttery.
Melt butter in a pan. Add flour or semolina and fry until it changes color. Slowly add milk and mix. Add sugar and cook until the mixture thickens. Serve hot or warm after it reaches a consistency.
